Ahi Tar Tar With Nuoc Cham Sauce

I Started using the Nuoc Cham Dipping sauce with Ahi Tuna and Salmon @onosushi last week. The Tar Tar presentation is my favorite, except I do really enjoy my head chef James’s pairing of salmon and strawberries with this chili sauce as well. Both fish stand up well to the bold flavors of the lime juice and Sambal Olek. The salmon, will be one of the featured dishes for the Eat Drink and Read fundraiser I am doing for the San Diego Council on Literacy on April 28th.

The Ahi Tar Tar is a neat little sushi item using won ton crackers and avocado. The tuna has a light splash of the sauce, and is tossed in a bowl before plating. There is a small puddle of Nuoc Cham on the plate as well. I like the way the presentation turned out because everything on the plate is easily eaten with your fingers. It is simple, Tastes good, and utensils are not necessary.

I have really been enjoying working a case again. It just makes me feel like I’m a small part of the restaurant again. You see I don’t derive satisfaction from owning a restaurant. I get my satisfaction, still, from working in a restaurant. Its the crew, the crass humor, the social commentary, and showing up even when you don’t want to that I enjoy.
